Borough Market (Southwark), a registered charity, is the leading fine food retail market in London, if not the UK, and Dr Belinda Stuart-Moonlight , leading the Moonlight Environmental Ltd Consulting team, has significantly contributed to this success by ensuring, on behalf of the Borough Market Trustees, that all food traders, whether they be wholesalers or visiting weekend retailers, have continuing high hygiene standards and comply with good Health and Safety practice.  She is also in the process of advising the Trustees on the undertaking of Risk Assessments concerning all aspects of the running of the central Market area and its surrounding properties, which attract many hundreds of visitors on busy Fridays and Saturdays to buy the best in fine foods.

Regarding the CIEH Foundation Certificate in Food Hygiene course

an informative, well-presented day. The course was made relevant to the attendees’ workplace situations – and by a very involving, knowledgeable, up to date and inspirational trainer. All Foundation Certificate in Food Hygiene training courses should be like this one!

I have used Moonlight Environmental Services for approximately 10 years and have always been delighted with the service they have offered me. Working with Belinda in a close business relationship, my company has improved hygiene structure immeasurably. Together we have developed a complete HACCP system and food safety regime which has enabled my company to achieve the BRC Global Food Standard Higher Level Certification. The knowledge and input from Moonlight Environmental had been essential to help us maintain our standards on a day to day basis.

When we decided to go for BRC Global Standard, we consulted Moonnlight Environmental Ltd. Dr Belinda Stuart-Moonlight first visited us in March 2005 and within six months, we had successfully gained accreditation.

Belinda gave us the most efficient guidance and workable program to achieve the global standard and the services provided were very cost effective.

We are now BRC certified authentic Japanese Yakitori suppliers to the restaurant industry.
